For the Moroccan maize (corn) milling market, there is no single mandatory national mesh standard equivalent to wheat flour regulations. Most mills supply products according to customer requirements (couscous manufacturers, bakeries, snack manufacturers, etc.). However, based on Moroccan commercial practice, North African semolina specifications, and industrial dry-maize milling standards, the following particle sizes are commonly used.

2. Fine Corn Semolina (Semoule Fine de Maïs)

  • 35 mesh ≈ 500 µm

  • 40 mesh ≈ 425 µm

  • 50 mesh ≈ 300 µm

Typical distribution:

  • 90% between 300–600 µm

Common uses:

  • Fine couscous

  • Breakfast cereals

  • Extruded snacks

  • Instant maize products

This range also aligns well with industrial maize meal classifications.


3. Bedes Flour (Farine Bedès / Bédès)

"Bedes" flour in the Moroccan market generally refers to a very finely milled maize flour, finer than semolina.

Recommended particle size:

  • 150–300 µm

Equivalent mesh:

  • 50 mesh ≈ 300 µm

  • 60 mesh ≈ 250 µm

  • 70 mesh ≈ 212 µm

  • 100 mesh ≈ 150 µm

Typical specification:

  • 90% passing 60 mesh

  • Majority retained on 100 mesh

Uses:

  • Bread blends

  • Cakes

  • Pastry

Industrial maize flour is typically classified below approximately 212 µm, with finer commercial bakery grades extending up to about 300 µm.
